Save the big boy for Thanksgiving, but on a weeknight a package of turkey breast cutlets couldn't make dinner any easier. Simply dust with seasoned (salt and pepper or your favorite mix) flour and pan fry until browned (about 3 minutes a side). Remove from pan.

Add 1 cup pineapple juice
2 tablespoons brown sugar
1/2 cup chicken broth
1 tablespoon Dijon mustard

Whisk together in the pan to bring up the browned bits and combine. Reduce until there's just about 1/3 cup left. Return cutlets to the pan and flip to coat with sauce. Run under the broiler for a minute or two to finish.

Variation: Substitute apple cider and maple syrup for pineapple juice and brown sugar.
