These are handy for small stomaches and just the right size to put on a bun for a teen's after-school snack.

The shortcut here is stop at the store and pick up a remixed meatloaf mix, preferably one with equal parts ground beef, pork and veal. If you want to make your own mixture, you can sub in ground turkey for the veal.

Catelli Brothers offers an equal mix at Tops Markets, other markets tend to be more beef centric.

My daughter loved the mini size of the meatloaf.

Enjoy.

Meadloaves
1 egg, lightly beaten
1/4 cup milk
1/2 cup dried breadcrumbs
1/4 cup onions, finely minced
1 1/4 pounds meatloaf mix, making sure it is 1/3 each of ground beef, pork and veal
2 tablespoons sweet chili sauce (Asian variety, not the sauce for dipping shrimp)
1 teaspoon soy sauce, such as Tamari
Dash of fish sauce

Glaze
1 tablespoon ketchup
1 teaspoon soy sauce
1/2 teaspoon honey

Heat oven to 350 degrees.

Combine egg, milk, breadcrumbs and onion in a medium-size bowl and allow to sit for about 15 minutes. Add meatloaf mix and chili, soy and fish sauces. Mix to combine. Scoop into greased muffin tin. This will fill 12 muffin cups.

To make glaze, mix ketchup, soy sauce and honey in a small bowl. Brush on top of meat. Place muffin tin in oven and cook for 18 to 20 minutes.

Optional: Add a couple of dashes of hot sauce to the glaze for some heat.

Saturday

Asbury Woods Nature Center will celebrate National Trails Day Saturday with a work party. Volunteers will be adding bark mulch to trails, cleaning up and making improvements. Lunch and beverages will be provided.

The work party will take place 9 a.m. to noon, and adults, families and groups are invited. Children ages 8 to 15 must be accompanied by an adult. Call 835-5356 to preregister.
