We took the kids picking more berries. This is delish.

 

 

2 pints fresh strawberries, hulled, with some reserved
1 tablespoon fresh lemon juice
1 cup sugar, divided
2 large eggs, beaten
1 cup milk
1 teaspoon vanilla extract
2 cups heavy whipping cream

 

Combine strawberries, lemon juice and 1/4 cup sugar in a blender or food processor. Pulse until berries are coarsely chopped. Place in refrigerator for at least 1 hour.


Remove berries from refrigerator and return to blender base. Add eggs and milk and whip until light and fluffy, about 2 minutes. Gradually incorporate remaining sugar (3/4 cup) and vanilla. Add whipping cream to blender and whip until well blended.


Pour into ice cream maker and follow manufacturer's instructions.


Top ice cream with reserved berries before serving.

 

Optional: Instead of freezing the whole batch, scoop out of the ice cream maker into ice-pop molds and freeze for ice cream on a stick.

Saturday

Asbury Woods Nature Center will celebrate National Trails Day Saturday with a work party. Volunteers will be adding bark mulch to trails, cleaning up and making improvements. Lunch and beverages will be provided.

The work party will take place 9 a.m. to noon, and adults, families and groups are invited. Children ages 8 to 15 must be accompanied by an adult. Call 835-5356 to preregister.
